The Damage Mechanism
Hot water strips natural oils from skin. Dish chemicals are designed to cut grease — they don't distinguish between plate grease and skin oils. The combination leaves hands cracked, bleeding, and vulnerable to infection.
Protection and Recovery
Wear gloves when possible, though service demands often prevent this. Apply heavy moisturizer before and after shifts. Protect cracked areas with self-adhering tape — it stays on through wet work better than adhesive bandages. Consider barrier creams that provide some protection against chemical exposure.
